Polifemo is the first pressing of the typical and rare “Tonda Iblea” cultivar, grown in the hilly area of Chiaramonte Gulfi, the heart of south-eastern Sicily. The olives are harvested in advance of ripeness, for the best qualitative result of the product. The oil is bottled after a short natural decantation and without filtration, in order not to alter the organoleptic and nutritional values and beneficial properties for health.
Excellent for soups, legumes, salads and fish dishes. The very low acidity (0.1%) and the powerful vitamin and polyphenolic structure make it suitable for regular use in all diets.
