Salame al Barolo is a typical Piedmontese specialty. This raw salami is prepared with noble pork cuts, flavored with spices, aromatic herbs and Barolo wine, according to an ancient peasant recipe from Langa. Then it is stuffed into a natural casing, tied by hand and left to mature very slowly. Salami al Barolo is unique and tasty, both for the flavour and for the scent given to it by this famous red wine, which also contributes to giving it a reddish colour. Thus was born a mix of flavours and aromas recognizable when tasted.
